These easy vegan caramel energy bites are so good when you just want something sweet but you can’t (shouldn’t) eat cake.
Ingredients
- 1 cup dates pitted
- 1 cup cashews
- 1 cup shredded coconut
- 2 tablespoons hemp hearts
- 2 tablespoons nut butter (I used almond butter)
- 2 tablespoons maple syrup
- 1/2 tablespoon cinnamon
- optional : a pinch of salt to make them “salted caramel”.
Instructions

In the bowl of a food processor pulse the dates and cashews together.

Add the coconut, hemp seeds, nut butter, syrup, sea salt (if using) and cinnamon, and pulse until a dough forms and sticks together when you press it between your fingers.

Form 1″ balls with your hands and place in a parchment-lined Tupperware.
