Hi! So, we made this amazing eggless breakfast sandwich the other day and we wanted to share the recipe with you! Here’s the YouTube video and the ingredients are listed below.
What you’ll need:
For the “egg”:
– 1 block of Firm Tofu
– Just Egg (enough for the “yolk”)
– 1/4 tsp (or to taste) Kala Namak (black salt)
For the carrot bacon:
– Carrots
– 2 tbsp Tamari (or any soy sauce)
– Liquid Smoke (to taste)
– 3 tbsp Maple Syrup
– 1 tsp Garlic Powder
– 1 tsp Onion Powder
– .5 tsp Salt
– 1 tbsp EVOO
For the Toast:
– Bread/English Muffin
– Vegan Cheese Slices (we used Follow Your Heart because it melts pretty well)
– Avocado
– Vegan Butter (we like Myokos)

The idea of carrot bacon is blowing my mind! This looks pretty yummy. I used to be a vegetarian, and would seriously consider going back to that life. I’ve never been vegan, though.

I know so many people enjoy eggless sandwiches, and I’m glad this is an option for those who don’t eat animal products. Unfortunately, I’m allergic to soy, so tofu will never be a possibility for me, but this does sound delicious and unique!
Oh no!! Maybe I’ll do a non-soy vegan option for breakfast post soon. I’ve been cutting down on the amount of soy I have!
