How to make Vegan Muffins
I will literally make these 2-3 times a week because they love them so much! Pro Breastfeeding mom tip: Oats are great for breastmilk production so these are great for everyone all around!
Ingredients:
3 C Gluten-Free Oats
1/3 C Coconut Sugar
1/2 C Applesauce
1 tsp Baking Powder
1 tsp Pumpkin Pie Spice
1 tsp Vanilla Extract
1.5 C Almond Milk (you can use any non-dairy milk)
Mix everything together and let it rest for 20 minutes. Grease your mini muffin tin before spooning the mixture in, and then bake it at 350*F for 20-23 minutes.
Vegan Substitutes
The original recipe that I found used eggs and butter but I find that omitting those has worked great for us.
